You're fine to take them up to 24/7 - it is very hard to stress a plant in veg, flower is where they get picky. 24/7 does make a plant shorter and bushier, but not by a ton. If I were in your situation I'd switch to 24/7.

Any type of edible acid works. Lemon juice, lime juice, vinegar, etc. The homemade acids will screw-up your hydro grow, but for soil they are fine.
