    I’m picky, but I totally enjoy tasting what other chefs are doing. Also, having a commercial kitchen, I have a keen eye. But that didn’t stop the red tide from getting me in New Orleans.

    We drank it a lot as kids. Grays Papaya in NYC. Hot dog and a papaya drink. If my father drove to Manhattan from Brooklyn it was a big deal. They’re still around. The drink had that weird taste and I have no idea what percentage of actual fruit was in it but we loved it.

    In hindsight, it didn’t need the fat from the cheese. Manchego would have been great. But heck you coulda put that pineapple chutney on cardboard and be happy.

    Test burger. Pan fried the burger. Juicy. Smoky. Big English muffin was a good call. Chutney is so bright and fresh for something cooked. Almost a salsa. Forgot to mention fresh ginger in the chutney ingredients. That and the ground coriander bring it. Pineapple is forward but tamed by the...
