The flesh is very firm,they are traditionally called "crabeater" so the flavor is similar but it's a meat fish.Like a chicken cutlet in consistency. It actually lends well to some grill char or here it's broil.It deepens the flavor.View attachment 5288193
that's a big un. i'll have to try it one of these days if i ever see it at a market/menu.
