I'm so tired, but the meal was good. Dinner for two. 7lb Pekin duck: stuffed with rosemary, thyme, sweet onion, lemon, blood orange, garlic, s&p, seasoned outside with Himalayan pink salt and fresh cracked pepper and rubbed down with lemon and blood orange, roasted with a balsamic vinegar lemon honey baste. Giblet gravy made with the neck heart and liver, thyme, rosemary, garlic, celery, carrots, onions, picked neck meat, duck fat, gibs went to doggos. Stuffing made with brioche, sage, parsley, red onion, celery, chicken stock, fresh cranberries. German apple pie made with granny Smith and pink Lady apples 5 each and vanilla custard, crust is butter flake.
