It might depend on the sausage you're using. Much of the store bought sausage is just loaded with sodium and other things. That's why I make my own from pork I grind. I've known people that have issues with bell peppers. They can eat plenty of foods that cause others heartburn without a problem though. I also know people that don't eat cucumbers for the same reason.
it's weird: i can eat sausage both store made and local butcher made w/o issues. even spicy breakfast sausage. but when added to gravy, it lights me up.

and from what i read, the green bell peppers aren't ripe which gives some people problems. yellow, orange and red bells are fine with me.
