All I can say if you don't already have one is for $20 you can go to lowes or homedepot and get a temp/humidity gauge that has a min and max setting that you can program for certain thresholds. They have audible alarms.

I like your idea, like you said, I'm skeptical of the towel with molds and such. I did something similar, but i used a bowl of water on top of a small reptile heating mat with a thermostat (potentiometer style pretty cheap) worked wonders real easy to use. Wish you luck!

I would definitely run 6x600's. I personally like a little overlap of the light spread. Hps intensity kinda diminishes at the outer parts of its beam spread, I would not compensate for that with 4x1000's. Just my opinion.
