By saying heat is not an issue, I assume you have adequate exhaust and ventilation systems in place.
Generally 12 - 15 inches above the canopy is sufficient.
A good way to make sure the temps are ok is to use your hand.
Place it under the lamp, and see how close you can get to the light...
It's a handy item to have. A few PVC 'T's and a couple lengths of pipe across the centers of the support frame will prevent your exhaust fan from collapsing or deflating the unit.

Did you damage any roots when examining the stem? This can cause a plant to go into shock. There are chances it will spring back to a healthy state in a few days.
Well, once pollinated, they will definitely produce seeds.
If the sacs are in an isolated location, you may find that only a portion of the bud goes seeded. Pollen physically must come in contact with each of the flowers in order to initiate seed growth.
The effect does not magically transfer...

And I too doubt that you can get high off eating bud that has not been extracted into oils (in the case of lip-balms) or heated to alter the structure of THC to a more effective compound.
Do not bother topping autoflower plants.
They have a relatively short growth period, and will not benefit from being topped, as the new growth will not have had adequate time to develop.
You can add perlite to the new soil you use. If anything, the improved aeration and drainage of the soil will benefit your girl.
It will not affect the growth more than if you transplanted into an identical soil.

You plant to veg for just 3 days? I would skip out on the negligible veg time and go straight to flowering. Saves you some space, and the need for that extra cabinet.
