I've had Maine bugs professionally prepared & the same with Spiney's & I much prefer the warm water bugs (& I rarely use much butter/lemon dip).
To each their own.
The warm water I had were smaller, still good thoughI'm thinking warm water lobster taste like crayfish not like north Atlantic lobsta.
