I'm gonna smoke it low and slow(225-250 degrees) with hickory and maybe a chunk of pecan for about 10-11 hours. I've got it marinating in worchestershire, beef broth, and liquid smoke right now. Then I'm gonna rub it down with just salt and pepper.
