so i need to buy a smoker now... lol thanks man.. will check out some shops around me. want this brisket for tomorrow

good wayh to spend your birthday man, relaxing
You don't need to buy a smoker nig. You can just use the indirect method and then use a sheet pan or something as a heat deflector. I prefer smoking on my weber kettle grill just like that. I have one of those small r2d2 looking smokers, but it's very hard to keep a steady temp on that thing, so I don't use it.

I shove all the coals to one side and then I add an aluminum pan under where I'm gonna put my meat. This also helps keep your grill clean because it catches all the drippings. The fat won't mix with the ash and gunk shit up or start a fire down there.

This is how I set it up for that pork shoulder from last week.

Yea, I'd love one of those. Wake up, make a coffee, and cook breakfast outside!!

I aim for 225 degrees where the meat is. It's always a balance of air flow to heat. By keeping the air flow down, but still enough to stoke the coals, you can manage to keep it around that temp. I'm always adjusting, opening/closing the bottom vent to regulate temp. The most important thing is steady temp.
