That's not what's important when running a business- it's about keeping your labor costs in control. In a restaurant you're usually looking for 1/3's, (1/3 labor/ 1/3 food/ 1/3 fixed costs) so if I pay about 7k/week or 360k/year my gross sales are about 3x that. You don't just add on labor costs unless your revenue is increasing... Unless you're a fucking moron. An extra $500/wk or 25k a year in labor is a HUGE addition- I'd need to bring in 75k more in sales/year.
Plus, a business owner doesn't just pay more unless they get something back for it. If the skill of my employees suddenly became better or cogs decreased it may be possible, but in my industry, my costs for food only go one direction..... Up.
And if you question my ethics or say I'm only in it for myself, you'd be blown away at the capital investment I've spent of my own money to get my place up and running, and the costs of permits and fees to run a food establishment per year. All that on top of utilities and rent, and it doesn't leave much. In fact most would be blown away how little I make in a year. I don't make much, but to me the altruistic feeling of knowing I give 16 people jobs that need them, I do fantastic things for the kids and local school district, and I donate my time and product to churches, hospitals and research facilities all over town daily if not weekly is what makes me feel good.
I don't believe in handouts. I paid off 120k in undergrad, as well as 48k in culinary school by the time I was 30. Simply by working my fucking ass off. I at one time held 6 jobs, and worked about 20 hours a day while in San Fran. I've lived in probably 10 different states and never have held a job longer than 5 years, as I apprenticed with top chefs all over the country. Many of my staff have worked for me for over 2 years now- do they do it for the money? Probably not! But there's more to life than money. All of my staff know that nothing comes for free, and if you work your fucking ass off you can have anything you want. Making someone like me pay $15/hour to someone with skills that is only worth $9 is not right and unacceptable to me.
All these arguments from bleeding hearts and "just because" and "don't you appreciate your staff?" Are ludicrous and hilarious. As an employer it is not my job to make sure someone can pay their rent. There's 24 hours in a day and if you're only working 8 of them and you can't pay your rent, get a second or third. That's what I did. In San Francisco... One of the most expensive places on earth- and I was making $6 an hour.
