I know hot turkey sandwiches is a favourite, but I'm thinking a turkey pot pie or something different.

Late to the party, but I bake mine upside down. All the juices run to the breast meat that way. If you want it pretty, you can roast for 1/2 hour breast side up for the last bit of cooking.
