Lookin good except I would not fully cover the roasting pan with foil like that, it'll end up steaming it and your skin will never brown. Just take one piece of foil like the size of a sheet of notebook paper and lay it over the breast so they don't dry out.

Happy EASTER!

I know there are some very good cooks that frequent this site. Just wondering if anyone had any special turkey cooking tips they wanted to share.

I usually brine mine in Salt Water for a couple days before I cook it. But besides that I just cook it the regular way, butter, stuffing, salt, pepper, baste, etc.

Anyone else do anything fancy?

Brine-ing is a must , but you already got that down.
The best cooking instructions I know of come from Alton Brown.
I have followed his exact instructions for the last two years and have had perfect turkey for 2 years. I love Good Eats!

So @Unclebaldrick gravy...

Today I boiled the gizzard/ innards of the turkey in water. I'll strain it, and add pan drippings and some of the smooshy/ caramelized onions and vegetables after. I'll puree that and season for taste - I really like salt and pepper so I'll probably add that.

I've done the bag-o-gravy and add water, and that's been totally tasty in a pinch. You can add whatever to that as well and make it pretty good.

Totally interested to hear what others do though...

Actually what you're saying is correct, my statement was more a preference thing. If I were to do what you're saying I would prefer to use an orange or maybe a Meyer lemon so it's not so tart. I don't mind a little lemony flavor with my turkey, I just don't want it to over power. But thats just with turkey now that chicken recipe I gave is very lemony and sour.

But, it's stuffed with a compound butter (garlic and thyme) under the skin, normie butter and salt and pepper above ground. Stuffed with stuffing and all propped up on an ass-load of onions, carrots, and celery. Threw some thyme sprigs in there too.

Got a little over-zealous under the skin, and it tore in a couple places. Now she's tented and in the oven at 325. For a bit.

Good job chica! I would recommended next time to cook your stuffing outside of the bird. It tends to take the bird a really long time to cook with all that shit in the cavity and you run the risk of either undercooked stuffing, undercooked turkey or over cooked turkey.

Either way, be prepared to put some foul over that turkey's titties at some point so they cook at a little slower rate than the dark meat.

We love those cast iron enameled pots. We have a bunch of really old ones from thrift shopping through he years.
