Coco has a particular physical structure that allows for the retention of high levels of oxygen in the media.
It is safe to water coco even when it is wet. Actually, this is preferred. You do not need to treat coco like soil.
Many growers water by weight in coco. Lift the planters often. When they weigh 1/2 of what they did directly after water then you can safely water again. Most growers in coco water/feed at least every other day.
Without knowing more about your grow, like the pH, the temperature, your nutrients, the volumes used per gallon, how often they've been feed, how old they are... You know... The very basic kind of information a person would need to help you out without the courtesy of a picture... I don't think anyone is going to be of much help. It could just be so many things.
Keep your pH at 5.8 and your nutrient levels appropriate for the current stage of growth and your plant might be okay. If you'd like an answer you are going to need to include all the necessary information and ideally a picture as well before someone can tell you where you've gone wrong.
But bottom line, you can water coco when it is still wet. If the plant has a mature and fully established root system you can water as often as twice a day in this media. Allowing coco to dry out will cause precipitation of salts and can lead to build-up/toxicity or pH fluctuations.
