I'd like to try my hand at a Chicken Curry - here's the recipe I've got in mind.
Any curry aficionado out there like to offer improvements ?

Curry Mango Chicken

Ready In: 2 Hours 15 Minutes
Servings: 6
Chicken:
3 1/2 tablespoons curry powder
2 teaspoons minced ginger
2 cloves garlic, minced
1 pinch crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon thyme
10 skinless chicken thighs

Rice:
2 cups converted long-grain white rice,
rinsed
2 cups mango - peeled, seeded and

chopped
1 onion, chopped
2 cloves crushed garlic
2 teaspoons minced fresh ginger root
1 tablespoon curry powder
1 pinch red pepper flakes
1 teaspoon salt
1/4 teaspoon thyme
10 whole allspice berries
3 tablespoons brown sugar
1 cup water
2 cups chicken broth
2 tablespoons lime juice
1/2 (14 ounce) can coconut milk
Directions:
1. In a large bowl, stir together the curry, ginger, garlic, red pepper flakes, salt, pepper, and thyme. Place the chicken in the bowl, and coat evenly with seasoning. Cover, and marinate for 2 hours or more.
2. Preheat oven to 400 degrees F (200 degrees C).
3. In a large bowl, stir together rice, mango, onion, garlic, and ginger. Season with curry, red pepper flakes, salt, thyme, allspice berries, and brown sugar. Stir in water, broth, and lime juice. Pour into a casserole dish, and arrange the marinated chicken on top. Then pour coconut milk over the top. Cover with aluminum foil.
4. Bake in preheated oven for 1 hour. Remove foil, and cook 10 to 15 minutes more. Remove allspice berries before serving.

Can't say I know much about curry's in general but that looks pretty good. Might have to experiment with it. I can ID all the flavor tastes in my mind except the curry powder.

For me, tonight's probably going to be a tuna steak I should do today. On the grille, lime juice, cilantro, olive oil, cumin. Oven (not wave) baked whole Yukon Golds, olive oil, sea salt, fresh steamed broccoli, butter. The oatmeal/brown sugar apple crisp w/ fuji's and honeycrisp's. A bourbon I haven't tried before (Bulleit 10 year). A tiny pill of O. No bump and I'm out like a light. Make's up for the dirty whore I was at the mirror last night.

The whole recipe is pretty sound. I use white sugar n my curry but im sure brown would be fine. I might put two pinches of pepper flakes in if your curry powderisnt that hot. I like a spicy curry and if you aint got those damn allspice berries just use a pinch of powder. Mail me the leftovers K?

I'm not a big fan of really hot foods (and I love wasabi - WTF is wrong with me ?) so I'll taste test the curry before getting wild(er) with the red pepper flakes. And I don't think I'll be able to find the berries, so like you say a pinch of ground allspice will have to do.
Gonna cook this on Sunday & will try & remember to snap some shots of it.

I made grilled chicken (seasoned with garlic and light lawry's) and whole grain velveeta for dinner.

MMMM

And tonight I have to boil 18 eggs for deviled eggs.
