The eternal question... harvest early or leave to ripen and get mouldy buds? Thoughts please.

Then learn how to fight mold.

This is a question that can sometimes be hard to answer. If you were to take a GSC down a bit early it would probably still be acceptably dense, but if the bud is more on the lighter side you'll be stuck with worthless larf. Better to just leave it up and disect the mold as it comes in like others have suggested. You can always pick out the mold when it comes time to trim and salvage as much as possible.
