So essentially increasing fresh air to the yeast environment. Far as I know, the yeast are genetically programmed over centuries to consume sugars, & produce the byproducts co2 & alcohol. It’s genetic, & not alterable by man or environment.Have heard that adding an aquarium air pump will produce more CO2 and less alcohol???
There, are however, many many different varieties of yeast. Simple Quick Yeast for baking, found at grocery store. Many variations of “fresh,” not dried beer yeasts. Wyeast & White Labs (I might be slightly off on the latter name). Some of those will tolerate a higher alcohol level without dying. These would be kinda pricey if you start a fresh batch every few days. Around $10 per vial or “smack pack.” You CAN keep small starter portions of yeast, as they do replicate themselves quickly. But you prolly know that.
So, I’m sorry - I don’t think the air pump will change the mix of alcohol / co2, but perhaps there’s a yeast variety out there that works better for you.
