Would the buds not be full of more seeds if i had of left it any longer? I was just afraid of completely ruining the crop with seeds

You should have let it go. There are already seeds but if you had waited at least you would have had good pot with seeds instead of pot that was weeks from finishing with seeds.
Damn well least i know for next time. I couldnt get definite answers so i panicked and chopped

If it is rough smoking, I would think about decarbing and cooking it down with coconut oil. I just did three ounces of last year's trim and popcorn into 16 ounces of oil. I've really enjoyed the long lasting highs. 2 Tbs in a cake mix is plenty strong for me. So far I have made canna banana nut bread, canna pumpkin bread, and of course canna brownies. Just don't lick the spoon.

harvesting is based upon the ripeness of the trichome contents using visual inspection to while also considering plant age, breeder specs, leaf conditions, feeding chart/schedule used, lights used et, plant tell us when they're finishing, its easy to spot.
Just like it was easy to see you were going to chop regardless of what was said. Google has oodles of trichome harvest pics everyone knows that.

seeds are made when flowers are pollinated. seeds wont magically multiply with time without a male/confused female to pollinate them.

what strain?
light?
how long have they flowered before cut?

Is it possible to still make good quality cannabis oil?
I wouldn't attempt to make it into oil, your still pulling premature material. You can probably make oil....just not good quality. BUT, finishing the plant and turns out its full of seed, you can still turn it into oil and it'd be good quality. And you would have yielded in oil numbers vs flower numbers. Or at least gotten closer than chopping early.
