Red beans boiling with a ham hock and a Tbsp of Emeril's Cajun spice. Need to sauté up some celery, garlic, onion, and bell pepper in a bit and throw it all in the pot. Haven't had time to get an afternoon snack yet.
Sounds delicious.

I pulled out a quart of stock from the freezer I made from a ham bone awhile back. I'm going with a potato sausage soup. I had the bottom halves of some asparagus that I had broken off so I peeled them, cut into small pieces and tossed them in. I also added a medium onion, a couple stocks of celery, and a carrot. I sauteed the mirepoix in bacon grease. No recipe. I'm just winging it. That's how I roll. :mrgreen:
