I usually start giving nutes at the 2 week from seed mark, but start off at 1/4 the recommended strength and increase in 1/4 intervals every week, for a period of 4 weeks...
If the change in light cycle does not cause her to show sex, she will show you sex in about2-3 weeks...this is when she will be fully mature and ready to flower...

I personally don't think a point or two is a big deal, anywhere between 6 an 7 is usually fine, but try and stay to the 6 end of the spectrum. Soil or hydro also makes a difference, some hydro users go below 6.
