At a certain point in the fruit's growth, the fruit pretty much stops adding cells, from that point on, the fruit gets bigger because the cells elongate - that is why you see the increadable speed of growth, sometimes you can see them change in an hour or so. Probably the best time to pick is just after they stop adding cells. This, however, is just my theory. i really don't see the point in picking them early simply to get a tiny bit more potency.
