If it smells like hay after a proper dry and cure, you most likely dried too fast or harvested too early.
It’s weird though because it smelled fine before harvest. Unfortunately, harvest was determined by weather which was terrible last autumn, had to harvest so it wasn’t consumed by bud rot. I’ve got a hoophouse over them this year, hopefully will help.

Yep very common for bud to smell great while growing but to smell poorly if it gets harvested early. When harvested early it doesn’t reach its full terp potential, and it also doesn’t reach its max density which results in it drying to quickly killing the smell.

Get good genetics, don't harvest early pretty much everything goes around 10 weeks, don't over fertilize, slow dry 10-14 days 7 at the least, dry trim, jar around 65% and sweat the buds till 60ish (or use paper bags), enjoy dank bud that never smells like hay and doesn't need to cure or be pinched/ground to smell the crazy good terps. The end.
Is there a temp point that would be too low, like if it took a month to dry or just stick to the above and below 60-64. Im only asking because I have a walk in cooler with a split refrigerator unit that I will be using to dry this time. Complete control on temp and rh assuming a 70 pint can handle a full 5x7 room, I expect it will. Other then hang time (I just don’t know in this room) your answer is my basic plan.

Some scientific proof that 55-65% humidity is tbe 'Cure Zone' please.

Easy to copy or talk broscience, harder to prove.
I also hear bovada packs can also take away some of the aromas and even taste. No need to use them at all though with proper drying and curing.

As close to 60F and 60% will get you to 14 days. I have trouble getting that temp all the time so 60-65F usually gets me to 10 days and 66-70F gets to 7-10. Humidity is easier for me to control with and ultrasonic humidifier and an inkbird controller so that stays around 55-60%. Indirect airflow in room dont want dead spots where mold can grow. They will be ready when they get a bit crispy feeling when lightly squeezing the buds. That part takes time to know how crispy is too crispy or not crispy enough.

I found it doesn't affect them if the buds already sweated and stable. I think adding moisture can kill smell because if I dry too far and add too much moisture back too late, it will kill some smell. If you add back a little moisture (like up to 5%) quickly it doesn't affect it's curing ability or smell. Like you said, you really don't need bovedas though I just use them in the winter when my humidity it like 15% and I'm opening the bag or jar a lot

Look at reality, you fucked up and still are, most of what you say in other threads is low at best, marginal on a lucky day and just giving us a bad name the rest.

So with 75F temperature and 35%-40% humidity I am jarring after 8-10 days. I know its not perfect but I can't change it in this time of the year.
