Will the leaf grow back because it now only has 1 leaf on it
No idea. Be patient and see. Most of the time they'll bounce back.
How did the plant break in the first place? Not mucking around in the dirt digging for seeds, right?

It broke while removing the seed with tweezers
Why do you continue to insist on touching the plants? You had a few threads yesterday where the clear and overwhelming consensus was to just leave them alone!
