Unamended meaning nothing to buffer the ph. You only have to not worry about ph in a good well amended soil. Not all soil ph buffer. Also if you look at a nutrient ph absorption chart looks like p and cal get lcked out around same ph. You may wanna save your snarky attitude for someone else.

I think your letting them get to dry then using to much water. A gallon of water is to much if you are in 3 gallon (12 liter) pots. If your in 5 gallon you are probably OK.Calmag and P def? Overwatering , maybe? Plus you went a bit overboard with the nitrogen.
