That's how I do mine. They get opened daily and dumped out onto a tray as they form a big lump so I gently break that up and let them air dry for a half hour or so then back in the bag they go. After a few days they've lost almost half their weight and don't stick together so bad so I might just open the bag and shake them a bit to loosen them up and get some fresh air in there.
Even after a few weeks of that they will still form a mass in the jars and may need to be dumped out to break that up. Daily burping for sure the first couple weeks.
I have had some get mouldy over the years but usually caught it right away so those get spread out on a screen to quick dry and get used for edibles. I'm not freaked out by a little mould. When we were teens we used to moisten pot and bury it to let it get mouldy on purpose in the mistaken belief it got you a lot higher. Nobody ever got sick or died. lol
I used to do basically the same thing using wax paper lined tobacco tube boxes. I'd use my trim scissors to punch holes in the paper and the boxes and could get a good 5 weeks drying time before going into jars. 100g of wet bud in each box at the start that would be slightly under 24g at the end of the cure and ready to smoke.

A good method I read about is to put your freshly trimmed buds in mason jars and cover with a layer of cheesecloth and slow dry them in a fridge. Only half-fill the jars so you can just rotate them and shake gently to break up the clumps. Either a rubber band or the metal ring can be used to keep the cloth on. Gonna make everything else taste and smell like pot but I don't see any problems with that.
