The first bear I processed I screwed it up by hanging it for 5 or so days like you would a deer .I went to the annual hunters feed in Ennis Montana this year. Got to sample all kinds of game recipes most of them being chili's. Moose, elk, antelope. There was this one asshole that obviously couldn't cook for shit. Almost spit out his bear chili(think it was bear), tasted like a cauldron of dirty assholes.
Then I learned that bear meat has to be treated like pork & processed right away.
The fat in the meat will go rancid quickly.
The damn dog wouldn't even eat it.
