Speaking of knives, my wife and I have decided our combined birthday present this year is to replace our mish-mash of cutlery combined from a mess of relatives with various degrees of knowledge concerning knives. i.e. all but 2 are getting thrown away.
So trying to decide on a line,
If you know industrial kitchens, you know Victorinox polymer handle, stamped blade knives are tanks in the kitchen, not exactly kitchen queens but they'll take a beating and survive for decades. They've got a forged line that competes against the Zwilling 2-dude level knives. My Swiss Army knife has survived things a knife should never have seen, and despite some pretty severe damage I was able to straighten and re-establish an edge on it with nothing more than a stone after 25 years. My mom gave me one of her early 1980's Victorinox knives which she got when managing a kitchen, the knife I learned to sharpen knives on, for my wedding. In 2024 it's still the only knife I use. I've really liked the few Zwillings I've had a chance to use.
So trying to decide on my kitchen queen set. I'm still going to get a new set of Victorinox drawer beaters no matter which way I fall.
/Only 2 times I've cut myself in the kitchen I was completely sober and using crappy management purchased and required 'V' sharperners against my better judgement.
