Ok Yada you may have passed Over/Under watering 101 but here is another one. How long after watering should the plants show signs of recovering from the underwatering?

Depends how healthy the root system is. I'd give it 12-18 hours before officially worrying...but 8-12 before I was secretly worrying. It can be lightening fast.

Well sort of. I used a moisture meter as well but it kept saying very dry. Maybe it was right.
