at 6ft it wouldn't be too intense for the plants. Yes a touch overkill but nothing to worry about. I run 1000w / 190w true in a 4x4x6 tent. I think that more power is better Especially when bringing up seedlings it prevents stretching. Maybe you can get a lower power light for your smaller veg...

Watering in at 4.9 probably the issue. Cooking your roots and substrate making dead matter which is lifting your runoff pH. Stop trying to be edgy and cool. Just go down the middle, plants like boring owners... Keep the nutes simple and the water wet.
