Me personally, i would just use the FFOF as ive done before. Many others use the HF first or just mix both, i really dont think you can go wrong either way. The safest route might be the HF----FFOF after repot, if your newer and want to be careful.

FFOF has enough nutrients in the soil to carry plants for 35-40 days, they will only require straight water. After the plants use up the nutes in the soil i would just buy nutes to feed them throughout flower. I cant help you on the compost , not my area of expertise at all.

Coco requires a lower PH than soil I aim for 5.8 - 6.2 max in coco. Some have had success at higher PH in coco, but majority stick to the 5.8-6.2 range.

I think they are ready, as previous poster said, swollen calyxs and orange receding pistils are a decent indicator. Jewelers loop would be the only other way of knowing for sure. Check the trics for clear/cloudy/amber
