You me a ph reader there are PHpens out there that are cheap just drop the vinegar in and stir then measure PH

I use vinegar too I've also used lime juice as well everything turned out fine

That's a good buy lucky too haha I'm not sure about run off at this stage of your plant I never watered till day 12 the plant was a lot more defined and a lot bigger then. I would continue as you are as it is clearly working then aim for some runoff in a week or so. I hope you get some more...
