My technique is 6-7 days drying so that stems bend, then I jar em up. I have hygrometers that I put into the jars to monitor humidity. The humidity starts at around 70% and I slowly let them crawl down to around 60% The first few days I open the jar for a few hours then as time goes on I burp...
