I'll give that a try :) always good to get a tried and trusted recipe than wasting good ingredients on a random one off the ent that turns to be gash
That was the first recipe that came up when I did a google search.I just thought I was being nice:).I'll take the stab with a grain of salt.

Haha, no worries man, i appreciate the thought. I've just had far too many google recipes that are crap. Not too fussed when it's for a 10 minute cook, but for something as involved as this, i'd much rather hear from someone i trust, and from what i have read and know, if ninja throws up a recipe i'm certainly gonna give that a go. Boy knows his stuff!

Yeah, should have put up a "im not responsible" disclaimer.I would've felt like an ass had you made it.As far as google goes,most recipes I can look at and tell you if its going to be good or not,even if I like it or not.I've learned how to cook from my grandma and mom and from trial and error.I can cook better than they ever thought they could:).Verified because its now to where I COOK when we visit her house.Like you,I love cooking at the parents house,they have everything.

BUT tomorrow i'm making blackeyed peas w/salt pork and bacon and onions,ribeyes,baked potatoes,sauteed zucchini(fresh from the garden) and salad.Pics will ensue!:lol:

Oh and tip top, theres a couple of youtube videos that explain how to cook a pigs head. Theres that metro sexual lookin whats his face food network star guy that has one. When i set out to finally.....well eat brains, i did alot of youtubeing and just kinda came up with my own thing from everything i watched. The only real thing that you have to be sure of is that you have the cooking liquid reduced enough that when it sets it will be hard enough to hold all the stuff together. The more you reduce it the more concentrated the gelatin solution becomes. Geletain is extracted from animal tissue by slowly cooking it until the collogen in it melts into a liquid. Thats why pork shoulder gets cooked for so long, a large amount of collogen in the meat has to melt into liquid for it to become soft, or its like chewing a leather boot :):):)

I was thinking about deepfrying some moonpies for a treat and that I want to make some deepfried bacon wrapped jalapenos stuffed with shrimp and pepperjack cheese....and I make a killer jalapeno buttermilk ranch sauce/dip:).....going for tomorrows steaks and other odds and ends.l8r

One 17 ish pound pigs head
fresh herbs
champagne
olives
capers
lemon
onions, celery, carrot

find a pigs head, debone the head, remove the brain with a meat cleaver over the eye sockets.
simmer the pigs head meat, skull, and mirepoix with thyme pepper salt and some champagne until spoon tender.
strain cooking liquid from solids and saaaaave!
remove all meat from jowels, cheeks, neck and anywhere else and discard fat and skin and bone. (Eat an eye if your tough)
reduce liquid to where it will gelatinize firmly after adding champagne.
season jelly strongly. It will loose flavor when cold.
slice olives thinly and add capers with meat and herbs in a bread pan lined with plastic wrap. Cover in warm jelly mix and refrigerate until firm. Toast bread and slice cold head cheese as thinly as your rookie ass can pull of and serve with garnishes....simple ;)

I ate one, eeeeeeeew. Lol. It was wierd though. Theres not much from an animal i wont eat if it tastes good. It died so you can live, i figure the least i can do for it is not waste it. Ive eaten just about everything ive ever been able to get my hands on and theres not alot i wouldnt eat again...in moderation. Had some chicken wings tonight. They were the best wings ive found around town. Nice and big and a good price. Oh yess ill be back :):):)

good ribs and wings are hard to find. man i haven't cooked wings in time. or lap of lamb shit i'm hungry, got a punnet of strawbs for my after gym this morning.

Old man is out on a mediation for a few days so I took the opportunity to fillet off some sea bass for me and ma. I love fine food, but at times, there is simply nothing better than z seasoned fillet thrown in a hot own and served with a bit of lemon. Gurt lush! Gonna finish the evening off with a tasty sushi selection with a great big heap of wasabi and pickled ginger :-)
