It is hard to tell much from the photos, but usually red stems is caused by nutrient deficiencies, of which nitrogen and phosphorus is the most common(K and Mg also possible). Feed with a mild dose of a good all around fertilizer and they should recover in a few days. If that does not work, then you probably have some lockout issues in your soil due to nutrient build up. If that is the case flush with plain water then foliar feed with a mild all around fertilizer to get the soil up take going again. Good luck, you are catching it early so it should be fine. My first guess is that they just need a little more juice. Has the growth slowed down? Are any of the leaves getting a little yellow? Also signs of possible deficiencies.
ACK, did I read that right about the pH being about 6.3? If so, for soil.. you've locked out 3.. P, Ca, and Mg - definitely needs to go up to 6.5-ish or a bit higher as a buffer, depending on whether or not the plants are taking in a bit more water than nutrients, or vice versa. 6.5 is about the 'sweet spot' for soil, with a slight flex.this pict i take them now..the ph and the all plant..you get the leafs?! That pic was showing less than 6.5, was to the right of the 'half' line between 6 and 7.. is why I mentioned what I did6.5 and 7 sometimes....let me check again i will put another pict!

Ok, with that reading.. it's about perfect in terms of range.. if your pH has been bouncing, it may take a few for them to recover.. especially if you've flushed recently and recently re-added nutesmaybe thata was a air bubble in the soil..cuz i see more in 6.5 or 7...i feed whit good water!
