What's For Dinner Tonight?

tonight it is grilled chicken n taters with apple gravy.....the gravy is what makes it great though. I dont really follow recipes too often, but I found this last thanksgiving, and this shit is just amazing! :) here's the recipe if you'd like to give it a shot

Gravy:
2 cups (about) canned low-salt chicken broth
1/4 cup apple cider
2 tbsp. cornstarch
For gravy:
Using slotted spoon, transfer apples from pan juices to bowl. Pour pan juices into 4-cup measuring cup. Spoon off fat and discard. Add enough chicken broth to pan juices to measure 4 cups. Transfer broth mixture to large saucepan; simmer 5 minutes. Add reserved apples; simmer 2 minutes. Mix apple cider and cornstarch in small bowl. Whisk into gravy. Boil until gravy thickens, about 2 minutes. Season to taste with salt and pepper.

keep in mind that this was pulled from a thanksgiving turkey recipe, so calls for "pan juices" from said turkey.... this will be the first time I'm making it w/o the turkey drippings, so we'll see how it turns out. I'm sure it will be fine though :)

I was wary of it when i first found the recipe, as i've never really liked any sweet with my meats.... but this gravy is rather surprising ;)

I never would have tried it without someone recommending it to me for the very same reason!

im don't work so the least i can do is clean the house, do the laundry, and have dinner ready. this is a every day thing.. my wife and her famlie call me suzy home make.. i say im a farmer....LOL
 
thinking of making ham biscuits and red eye gravy for breakfast wed morning before we go to south padre island for a few days

gonna surprise you coming from a southerner, but i dont believe i've ever had actual red eye gravy before :( ..... i'm gonna have to look into that one
 
ham drippings and coffee to deglaze keep it thin

thats why i'm pretty sure i've never had it.... i'm pretty new to using coffee in cooking, but did recently find out about it.... I worked for an older Brazilian lady about a year ago, and she had some badass chili..... wouldnt give me the recipe, but swore that black coffee and a hint of chocolate were her secret ingredients.... i've been interested since then
 
I just had home made fried chicken the other night...very good...always.

I think I prefer Church's or Popeye's chicken over KFC....and I am a sucker for Popeye's red beans and rice.
