Yea I get the all natural beef too. It's way more tender. A porter house t-bone is a ny strip on the left and a fillet on the right by the way so its the best of both worlds. I know this because I cooked in restaurants for like 10 years.Yah...but you gotta luv the Porter....it's a great cut. NY strip is my fav though...porter second...filet third...rib eye fourth.

Yes you are right about room temp steak. Thats the only way I cook it.Here's a tip for you steak eaters.... if you have refrigerated the meat...marinade or not...let the steak sit out for an hour before cooking it. It will cook more evenly.
