Looks delicious. I’d feel inclined to put some powdered sugar on it. Honestly never had or seen a “dutch baby” pancake. A little research shows its an American name and a result of mixing up Deutsch (german for german) and Dutch (English for Netherlandish).


Upped the cinnamon, less sugar, different apples (Tessa).

Somehow working with dough is frustrating. Worth the effort though.

A little powdered sugar and some raspberry jam.
Looks like sort of filled spherical dutch poffertjes (”little puffers”)

“Poffertjes are also regularly found on German Christmas markets.” If the Germans like it you know it’s good.

Common streetfood in NL, used to be a cheap snack when I was a kid, more a of a tourist and xmas thing nowadays. Served with a piece of butter. Poffertjes restaurants pop up on city and town squares here in dec. No idea why they look like wild west

I do have a poffertjes pan somewhere I think…

Smells good too, unlike Churros… seems Churros stands replaced poffertjes on carnavals and it just reeks all over the place. Can’t even smell the stroopwaffles anymore :lol: Should be laws against churros stands, it’s like the new nutella pancake shop that took over Amsterdam a decade ago.

They are Dutch and can be filled if you want.
Ok, found the poffertjes pan. Must be over 20 y/o, haven't used it in years. Not a proper cast iron but it will do. Will make some this week, weather sure is starting to call for it.

Difference between dutch pancakes and others, as well as poffertjes, is that dutch pancakes don't contain a leavening agent. Oldschool poffertjes mix includes yeast, nowadays baking powder, but not a whole lot. Looks like the danish versions contain more of that (or buttermilk +baking soda) to make them even fluffier and the compartments in the pan are probably a bit deeper. Poffertjes are more like two concave disks like a flying saucer instead of a ball. Yes, I'm totally nerding out over mini pancakes :blsmoke:

The smile on a kid's face when you propose pancakes for dinner... multiply that by two and you get the poffertjes effect. Never goes away either so works on grandfolks too.

Could have bought a mix but included corn meal and it's easy enough to make

100gram buckwheat flower (kind of a key ingredient but can simply be replaced by equal portion of wheat flower)
200gram wheat flower
tbsp sugar
tsp baking powder
1/2tsp salt

-Mix up

Add a third of the total of 225ml milk

-Mix more

Add rest of milk while mixing

Add 20gram real butter, molten or very soft

- Some elbow grease

That's like 1.50 bucks (buck for me is like half way euro and usd so I don't have to convert :)) Ok a little sunflower oil for the pan.

And good for about 2 pans, 4 small portions... usually goes for 5 or more bucks pp.


But first, hotdog sausage rolls, i.e. hotdog in puff pastry:

+beer is a winner

Ok, aside from the poffertjes pan, need a squirt bottle. They‘re done in just a few minutes and basically need to flip them as fast as you fill the pan. A the same time can’t flip too soon cause it’ll start running and they get attached. Start flipping too late and the last ones are burned or sticky. Easy to make mess. Pros got these square cast iron grids and seeing them flip them one by one effortlessy is part of the experience.

Proper munchies satisfier. Though typical for these things, they fill you up fast and then a few hours later… I’ll probably feel like having some pasta. Whenever I make pancakes I make a few with bacon I’m thinking some slighlty pan fried bacon chips in these puffers would make them absurdly good. Next time…
