Thawin out the fixins for Red beans and rice. I have a smoked ham hock, a package of andouille sausage and a bag of small red beans. Need to make sure I have enough Emeril's Cajun spice mixed up and add a little more heat with cayenne to make sure.

Last nights Cajun red beans and rice, I did pretty well if I do say so myself. Tasty and enough heat to linger a bit.

Wifey out with her daughter tonight, left me and the dog to fend for ourselves. On her way out she said theres microwave stuff in the freezer. Sooo... off to the grocery store I went!

It's almost 50 degrees here so I'm going to grill some chicken satay skewers with a side of spicy cucumber relish

That is the best of all sheet pan chicken recipes. Although miso chicken thighs on top of cabbage sheet pan is a contender.
