For 2 loaves mix 4 cups of bread flour, 3tsp kosher salt, 1/4tsp active dry yeast. Add 2 cups cold water, combine to form a shaggy dough. Cover overnight. Form loaves on a floured table and allow to rise for an hour. I do that on parchment paper, the easier to wrangle dough into the baker. Preheat oven to 460. I bake in a terra cotta romertopf so that gets preheated as well. Score dough, place in oven. 50 minutes covered, 5 minutes uncovered. Cool before slicing
