Corn SST has been fermenting for 3 days now. I think it's done. It formed a cap and then settled back down. Very minimal bubbles so im thinking its done already.
It's time to harvest some Aloe.
I want to make divisions of the pups and repot them. No way possible to do that without damaging the mothers. So sensibly, I'll make an Aloe ferment.
Again, I'm using my 1 gallon fermentation vessel. I added a splash of LAB serum. Not necessary but helpful. The Aloe leaf has a ton of bacteria already on it, even LAB. Under the right conditions LAB proliferate and create an inhospitable environment for other microbes. Adding LAB is my way of ensuring a quick start to creating those conditions that are favored for fermentation.
I don't weight out my Aloe. Approximately 1 gallon of diced Aloe, topped off with 2lbs of Turbinado sugar. Then I press and pack it all down tight. Helps to remove some oxygen and reduce the natural oxidation of Aloe when it comes in contact with air.
I like to use a heat mat, you don't have to. Things speed up with gentle heat. This aids in reducing potential contamination.
Here is what I have left. A rough chop and then adding it to the compost tumbler.
Looks like I still have my work cut out for me.
