Recipe for the kimchee piacere?
I don't follow a recipe anymore. I just wing it.

But the basics are

chinese cabbage
green onion
daikon "optional"
onion
garlic
ginger
Korean red pepper
fish sauce
apple or asian pear

I salt the cabbage for a few hours or overnight, squeeze out all the water, make a paste of all the ingredients in a bullet mixer and then mix that with the cabbage, green onion, and daikon if used. You can add carrot or all kinds of other vegetables. Sometimes I make just radish kimchi.
