Trump and his team now know that Mueller knows exactly how Stormy got paid and where the money came from. Not only that, they also know that Trump fired Comey because of the Russian investigation - specifically because James would not tell Trump flat out that he was NOT a target of the investigation.
This is actually a defensive strategy and a good one.
They know that Mueller knows the truth now. So rather than wait for it to come out later in some sort of bombshell press scoop or be dropped on the heads of a jury that didn't know about it in open court, they go ahead and throw it all out there for all to see.
That way, if it ever does go to trial, it's old news. There's no longer any shock value to it.

Secondly, if Cohen had been sticking to his guns about the payment and actually told authorities that same story under questioning, he is now guilty of obstruction and giving false statements.
