100% is just a number, and I point that out because using numbers implies rational analysis. Human certainty is innately irrational. The more we understand, the more clear it becomes that absolute certainty about anything is impossible. All we can really say is that we're convinced of something, or find the evidence overwhelming, but a truly logical person would allow for doubt in anything. Anytime someone expresses total certainty, that's coming from a place of irrationality.
That's even more obvious when talking about issues as divisive as you mention. A rational person would have to allow for the possibility that they might be wrong about a complex issue.
A humble person would never be absolutely certain of something when a big chunk of the population disagrees with them. A truly rational person would look at the facts and the evidence and form a conclusion about what is most likely, while allowing for the possibility of being swayed by other arguments.
The problem is, we're irrational and emotional beings. We find comfort and security in certainty, and often make beliefs a part of our self-image. That means that attacking those beliefs feels like a personal attack on us, and we become immediately defensive. We become emotionally invested in being right, which causes us to ignore any evidence that we might be wrong.
It's not remotely logical, but it's an exceptionally common, almost universal, human trait.
