Traditional carnitas are beef cheeks. "Cachetes" that's why there's so much lard..I've gotten into making carnitas stewed in a mixture of beer, fresh oranges, onion and limes. I know it's not traditional without the lard but you do that in a big old cast iron pot and holy fuck does it get just as tender and ya know, not cooked in lard.
