I've gotten into making carnitas stewed in a mixture of beer, fresh oranges, onion and limes. I know it's not traditional without the lard but you do that in a big old cast iron pot and holy fuck does it get just as tender and ya know, not cooked in lard.

No offense to lard I still use you in my pie crusts.
Traditional carnitas are beef cheeks. "Cachetes" that's why there's so much lard..

Really?I did not know that, thank you. Honestly. I only know the pork shoulder style. But I love lengua and I've never had a bad cheek. That's actually way more fucking awesome now as I know a pig guy that only slaughters after a month or two of straight acorns. Totally gonna try that soon. Cheers

Nvm.. I'm thinking of barbacoa.. my bad bro.. pork carnitas are bomb.. what did you use, rump roast?

Leave it to Mr.sunshine to make a taco thread on a cannabis board...

Here's my recipe,take an half ounce of good bud and roll it up like a giant blunt in a tortilla and microwave for 3mins to decarboxylate...Get some Mr.dew dipping sauce and chow down.

Make sure you have 24hrs to vegitate on the couch beforehand.

P.s I haven't tried this yet and don't think it's a good idea.But hey it's a taco ...kinda.

Every couple years we go pig hunting here; those pigs eating acorns are the absolute best pork there is; a rich nutty flavor
