haha, this whole splitting the tale concept to be intriguing, i'm going to have to do a bit of reasearch on that, sounds mad but wicked :)

i love that you call it a bug, their mouths are freacky fuckers aren't they haha, i just don't like it period, alien! i have really got to get into eating more fish, i'm having to blag more cooking times and recipe ideas etc more than i'd like at present with fish, meats i'm down with but i havn't cooked enough fish to be confident in everything i advise considering the amount of money being charged. not a good situation, need to change that pronto.

Yah... bugs. It is a local term down here for the Caribbean lobster, they have no claws.

Yah, as it was explained to me.... splitting the tail down the middle doesn't kill them (which was obvious to me looking at them in the cage), but because they are still alive the meat gets inundated with the salt water.

Kind of the same principle as cooking with salt water. Try it next time. cook a lobster in fresh and cook one in salt. You will notice a difference.

We knew the 4 pounder would not be as tender... it was more about the challenge of eating those monsters!!

O.k so I went to joes crab shack for dinner at the beach and had there new steam pots. Crab legs, mussels, clams, shrimp, sausage, potatoes, and corn with about 8 double vodka and crans and a long island ice tea. I was drunk as hell and got pulled over by the dick head beach police for going 8 over and making a illegal u turn. I did not have my license or proof of anything. I thought I was going down for dui for sure. My wife told him she usually grabs my license for me and she forgot. Not only did my shit faced ass not get a dui but he did not even write me a ticket thank God! Maybe it was because he was a redneck and I drive a Dodge ram with duelies and my wife was with me but I was so relieved when he did not ask me to get out of
the truck or give me a field sobriety test.
haha this cracked me up,.. estej burning up and down the beach in his dodge, all pepped up on cranberry juice.. Seafood and booze a lethal mix, the feel good combination clouds the mind..
Almost the exact same thing happened to me after a visit to a pancake joint, and like estesj the atmosphere was just right and the Bacardi n cokes were flowing.. Anyways, I also got off unscathed that night too.

in the UK we know nothing BUT cooking our shelly fishessss with salt :) brings out the flavour like noones business. the difference is black and white and beyond. the whole inundating with saltwater was how i figured it would be, marinated alive  (i never remember if it's marinaded or marinated :P firefox spells em both right doh)

i would simply fail trying ot get through a 4 pounder, maybe, i grabbed a 1kg frozen tail we had sitting around in deep freeze and i'm ashamed to say some of that went in the bin

and man, a lobster isn't a lobster without fuck off big claws,, SNAP SNAP i've found those things are lethal! as i have done with most large shellfish unfotunately. had a 3kg brown crab with fists the size of apple haging by my thumb, that was bad, passed out from the pain and all, had to go sit in the fridge i was burning up so bad. only large shellfish i've encountered without good pincers would be some crazy american crayfish we had in, might not have been american, can't recall, but it had point up tentacle rod thingys 3 foot tall, the thing was about 1 foot long and butch as a fucker, kinda a huge prawn lobster spider crab  that was weird, i may have a picture

typing as i go

i really wanted to find out what that bastard tasted like :(

Yupper.... that's the BUG!!! My favorite way to eat them is to cube the meat into small chunks and make a casserole with it. It is good eating if it is prepare the regular way....but not as good as the "lobster" we all recognize....with the huge claws. Yes, they look like bad arses don't they? Little tanks....

haha, claws is where it's at. i'm buying it for it's pure strength roar. love the whole lot of em. hardy and live long as fuck! we get in live canadian and cornish lobsters among others, and i have to say, you eat a canadian, and you eat a cornish, and just wow, the taste, i know i might seem biased, but wow, mmm, cornish. unlike the canadians which have heavily orange colours on the claws and tail, the cornish are a really deep blue, some of them are vibrant pinks and purples, i'm talking pop art motherfuckers. they are simply amazing to behold.

It's been my experience that the water temperatures really parallel lobster taste. The colder the waters are....the better the lobster.... IMO.
