I put my little peat pots into these bigger peat pots because they were drying out too fast but the roots have already started coming through after less than a week. the seedlings are still tiny so I shouldn't need to transplant yet, so what should I do about these roots?
right now the pots are just sitting on plates.

Please help me I'm new.

...transplant into a pot that isn't peat based, get plastic pots...... the roots will keep growing through those peat things.

THats why some growers use peat pods, you can transplant them into your bucket without distrubing the root system that containter is nothing compared to the rocky terrain the roots i had this year outdoor went through hahaha

I would get your 3gal buckets and set em up now and within the next 24hrs place the peat pod thing in the dirt and burry it i think it will build a good strong root structure if it has to fight its way through that shit any way

It will work putting them in the 3 gal pots. But I recommend now or in the future to get small, medium and large pots. Let them build a strong root structure before going to the next pot. This will make sure all the soil in the 3 gal pot is full of roots and you will get the best yields.
