Sounds like a top that will grow into a branch. I would call it a top or a shoot.

It should become a branch that supports buds/leaves if I am reading you correctly.

First grow so every new thing in like wtf is it. Smoked for years. I know buds well.. But from seed to that point... Newwww as shit

At the "crotch" of each node there's little leaves starting to grow.. What's it called and what will it eventually be???
At each node is a Fan leaf branch, a new shoot as GramReaper said. The tip of this is called the meristem and is like the stem cells of the plant. Indica dominant plants will stay shorter and more bushy than sativas, which have an apical dominance. That means their top node wants to grow the fastest.

Beside each node will be a stipule as well, a stem spike.
