What is the correct pH? Is it 5.8ph or what?

For starters, i am not having any trouble with my pH at 5.8pH. Well, I think i don't anyway.

Now, as we all know from this nutrient chart:

we are to keep our pH at 5.8, so that cannabis plants can get access to all nutrients.

Well i've been watching clips from the Greenhouse seed company. They take a video of them growing their plants, and talk a little about them. Now, these fellas seem to know their shit, they've been growing and selling seeds for years, and the little guy Frank seems to be intelligent.

I've selected a few clips to show that they have a different pH for different plants. But, for Indica, they keep their pH at 5.5 throughout all their veg stages. I've noted their pH for each plant...

The Church:

Flowering:
pH throughout flowering is 5.5pH

White Rhyno:
YouTube - Green House Seed Co White Rhino Grow with Italian Subtitles
pH throughout flowering is 5.7pH

White Widow:
YouTube - Green House Seed Co White Widow Grow with Japanese Subtitles
Flowering starts at 5.7pH,
week 5 is 5.8-5.9pH,
week 7 is 5.7pH
week 9 is 5.8pH

Himalaya Gold:
YouTube - Green House Seed Co. Himalaya Gold Grow w/Russian Subtitles
Flowering in...
week 5 is 5.9pH
week 6 is 5.7pH
week 9 is 5.8pH

Do we go by what the chart says, or is there a different pH for different plants at different stages of their life?

Thank you for the reply.
You say 'you think i want it between 5.5 and 6.5'. I appreciate what you're saying, but that's a big gap.
My pH might fluctuate -/+.1 but usually stays stable at whatever i set it at.Why keep it at pH5.8?
I'd like to know if i set my pH at a certain pH at a certain stage of my plants life, would it benefit my plants life?

On Saturday i sent Greenhouse seeds an email asking why they keep their pH for vegging Indicas at 5.5pH. And as usual they haven't got back to me. I've sent a number of emails to them before, asking about their seeds and they never get back to me. I have bought Greenhouse seeds, but i always purchased them through The Attitude seed bank.
