Two Indica Plants: LST from seed, defoliating, and deficiency possibly

What's up growers! My first grow and I was wondering if I could get some help. I have two indica plants that I popped from bag seed. I don't know the strain and Im sure the dude that sold me the smoke said whatever sounded good at the time when I asked. It was fire though! LOL . They are just under two weeks in veg and just under 22cm tall. The environment has not been consistent at all until about the last two weeks (learning). Got everything stabilized and just had a few questions that I can't seem to find anywhere (as it relates to my particular situation).
#1. Can you LST a plant from seed? My plant has been relatively small ( 6 inches with 6 nodes and thick stem). There is no way that I can see to have ever bent it without snapping it. It has been pretty ridgid.
#2. My plant seems to have huge fan leaves at the top that overshadow everything under. What's the best way to get more light down through the plant? I've heard to not cut your leaves and II've heard the opposite as well.
#3. Do you happen to know what the rust spots are on the leaves?
#4. Is the purple on the stem normal? I know it can be for some strains. I understand that not knowing what I have makes it difficult to say, but I was hoping if the pattern provided a more experience grower with an idea. Its not on the main stem and only on some of the leaves.

Set Up: 3x3x6 tent, 600 watt Solar system grow light, FFOF soil, 6.3 ph, 400 ppm last watering, Using fox farm's organic fertilizer and grow big.

1 Yes you can lst. 2, don't worry about it when you start bending them more light will get down there. 3, it looks like fertilizer spill from the fox farms. 4, doesn't look genetic. Don't feed them yet. Ffof has enough nutrients to last those plants a while.
